I started with a simple thought: I love salmon, and I love almonds - I wonder if I can combine them into something delicious in the oven? As it turned out, I could! I found three recipes, each one different, but all with the same idea of creating a crust around the salmon…but only one of them called for an oven (I don’t have much experience with ovens, which I’m trying to rectify now). I decided on something simple.
Ingredients:
Salmon Steaks - 2
Salt - 1tsp
Pepper - 1tsp
Almonds - 1/4 cup
Panko - 1/4 cup
Egg - 1 (whites only)
Dried Parsley - Just a dashThe recipe called for almond meal, which I didn’t have at hand. What I did have were almond slivers, which I chopped up as finely as I could. In retrospect I should’ve used regular bread crumbs instead of Panko, which burns easily in the oven. I figured the recipe called for Panko because the almond meal would’ve created a nice browned crust, and the Panko added an extra crunch. Down to the nitty gritty!
Preheat the oven to 500 degrees and mix the dry ingredients together. Snack on some while you’re at it (it’s difficult not to). Beat the egg whites and apply a thin layer on the surfaces of the salmon, then apply the dry ingredients generously until the salmon is covered. Once the oven has preheated enough (10 minutes or so), pop the salmon in the oven for 15 minutes, and it’s done! Make sure to test it with a fork to make sure it flakes easily. The meal shown above is served with a side of couscous and a nice spring salad. Add a dash of parsley for color :) Enjoy!
